Soil:Marly-calcareous terrain with minor percentage of clay.

Origin:Hilltop vineyards in the Alta Langa area, south of Alba in Piedmont.

Bouquet:Hints of candied citrus peel and toasted hazelnut which evolve into complex aromas of star anise.

Taste:An elegant wine with great structure and a very fine perlage. Excellent acidity gives this wine its freshness and persistence.

Food Pairing:Excellent as an aperitif and an ideal pairing with both raw and cooked fish dishes.

The first fermentation takes place in temperature controlled stainless-steel tanks. According to the classic method the second fermentation takes place in the bottle with contact on the lees for a minimum of 100 months. Followed by traditional hand riddling (remuage) pupitres and dégorgement à la glace. A period of bottle aging follows.
